Homemade ciabatta

Ingredients

For the bread

500g wheat flour

1 pinch of sugar

20g fresh yeast

300ml water

1 pinch of salt

2 tbsp olive oil

For the feta cream cheese

150g feta cheese

100g quark

100g yogurt

fresh herbs salt and pepper from a mill

1 tsp lemon juice

1 tbsp olive oil

200g cherries to garnish

This is how:

Sieve the flour into a bowl and make a hollow in the middle. Dissolve the sugar and yeast in luke-warm water and pour into the hollow. Cover lightly with flour and let it sit for 5 minutes. Now knead the dough, cover it in a bowl and leave it to rise in a warm place for an hour. The dough should double in volume. Add salt and oil and knead to a smooth dough again. Halve the dough, form into ciabattas and dust lightly with flour. Place on baking paper on a baking tray, cover and leave to rise for another 15 minutes. Bake until golden brown in a fan oven at 200ºC for about 25 minutes. For the spread, crush the feta cheese with a fork and mix with the cottage cheese and yogurt. Season with herbs and spices. Add lemon juice and olive oil and cool until serving. Cut the ciabatta into 2 cm thick slices, spread with the feta cream cheese and decorate with fresh cherries.
