Dumplings with Elderberry Compote


500 g wheat flour
20 g fresh yeast
200 ml full milk
60 g sugar
40 g melted butter
(+ 1 tbsp. melted butter for the mould and for brushing)
3 egg yolks
1 pinch of salt
1 tbsp finely grated lemon peel
6 tbsp apricot jam
2 tbsp honey
Icing sugar

Ingredients elderberry compote

200 g elder (elderberries)
2 pears, finely diced
Juice of 1 orange
250 ml water
1 cl rum
70 g sugar
1 pinch of ground cinnamon
1 pinch of ground cloves
1 packet of vanilla sugar
1 ½ tsp. starch (corn or potato starch)


  1. Put the flour in a mixing bowl, make a well in the middle and crumble the fresh yeast into it. Warm the milk just a little and mix 50 ml of it with a tablespoon of sugar. Pour this over the yeast in the well and leave to rise for 20 minutes, covered (small bubbles will appear on the surface of the milk).
  1. Mix the rest of the milk with the sugar and butter, then add this to the yeast dough.
  2. Mix with the dough hook of the food processor.
  3. Add the yolks, salt and lemon rind and knead to a smooth dough. Knead by hand on a lightly floured work surface. Form into a ball, cover and leave to rise on the work surface for half on hour (the volume should double).
  4. Mix the apricot jam with honey and grease an ovenproof mould. 
  5. Roll out the dough with a rolling pin into a square, divide into 12 equal pieces with a knife or a pastry cutter. Place a spoon of jam in the middle of each piece and fold together at the ends. Put them in the mould with the closure folding down and without any spacing between them. Cover with a damp cloth and leave to rise for a further 15 minutes.
  6. Preheat the oven to 180 degrees top and bottom heat. Brush the dumplings with melted butter and bake until golden brown on a middle shelf. Dust with icing sugar while still warm. 
  7. For the elderberry compote bring the listed ingredients to a boil in a pan.
  8. Mix the starch with two tablespoons of the boiled liquid and empty back into the pan. Stirring continuously, bring the mixture back to the boil once. Remove from the heat and leave to cool a little. Serve with the dumplings.
