Broccoli Soup
Do you also find the smell of fresh herbs irresistible?…. Is your garden full of the wonderful scent of fresh herbs?… In our herb garden everything is already growing well and so we have also used a couple of fresh herbs for this soup. The wonderful smell of fresh oregano and sage blends fantastically well with the wild broccoli, which we discovered at the market. This month we have a quick and very straightforward recipe for you. We like to spend time in our garden at this time of year and we believe this soup is perfect for a midday snack.
Ingredients
for 4 portions
250 g wild broccoli
1 onion
1 clove of garlic
1 tbsp olive oil
1 lt vegetable stock
ground salt and pepper
50 ml cream
a handful of fresh herbs (sage, oregano, salad burnet, coriander…)
1 tsp pink pepper
Optional: crème fraîche/sour cream
Preparation
Wash the broccoli and cut the ends a little.
Finely chop the onion and grate the garlic. Sauté in a pan with a tablespoon of olive oil. Add the broccoli and brown a little to create a delicious aroma. Add vegetable stock and simmer gently for 20 minutes. Season to taste with the herbs and refine with cream.
Various herbs and the pink pepper can be used as decoration.
If desired, top with a dab of crème fraîche or sour cream.
